Oh my goodness! I love waffles! Every Sunday morning, Michael and I treat ourselves to this divine breakfast treat. Old fashioned waffles are my absolute favorite, and the secret to these fluffy delicate treats?  Folding airy egg whites into your batter. THE best. Be creative and have fun with the endless possibilities of toppings! Easy like Sunday morning!


OLD FASHIONED WAFFLES

you will need…

2 cups flour

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon cornmeal

2 eggs, separated

1 1/2 cup milk

1 teaspoon good vanilla extract

6 tablespoons vegetable oil

Using a mixer, beat egg whites until they hold a stiff peak. In a medium bowl, sift together flour, baking powder, salt and cornmeal. In a large bowl, combine egg yolks, milk, and vanilla alternately with dry ingredients. Add oil. Gently fold egg whites into batter, and bake on a buttered hot waffle iron. EnJOY!

 

FRESH STRAWBERRY SYRUP

you will need…

3 cups fresh strawberries, diced

3/4 cup powdered sugar

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon good vanilla extract

In a saucepan over medium-high heat, combine all ingredients and bring to a boil. Reduce heat and lightly simmer mixture for about 15 minutes, stirring occasionally, until mixture is reduced forming a semi-thick syrup. EnJOY!
