you will need…

(makes about 4 large enchiladas)

1 onion, diced

1 pound ground beef (I use Simple Truth grass fed ground beef)

1 taco seasoning packet

8 ounces salsa of your choice

1/2 cup good red wine(save the rest for dinner!)


extra sharp cheddar cheese


shredded lettuce

tomatoes, freshly sliced

In a ceramic Dutch oven, sauté onion until translucent. Add ground beef and cook on medium heat just until slightly browned. Drain meat & onions. Return meat & onions to pan, and deglaze pan with red wine. Add taco seasoning and salsa and stir until combined. Turn heat to low, and place lid on pan. Cook for 3 hours, stirring occasionally.

When ready to serve, preheat oven to 350 degrees. Assemble enchiladas by placing meat onto tortillas and place tortillas in a baking dish. Top with freshly grated cheddar cheese, and bake in oven for ten minutes. Garnish with avocado slices, shredded lettuce, tomatoes and sour cream. Serve with black bean soup. EnJOY!
