Sayyyyyyy CHEESE. Does it really get any better? This girl L O V E S anything and everything pertaining to cheese—especially PIMENTO CHEESE, the caviar of the South!
There are so many variations to Pimento cheese—it’s crazy, but it is basically cheese, pimentos & mayo married together, creating pure heaven! In the South, we pride ourselves on award-winning pimento cheese recipes, but y’all. A dear friend (thanks, Mrs. Kea!) introduced me to this recipe, and it seriously is THE bees knees!

8oz extra sharp cheddar cheese

8oz extra sharp white cheddar cheese

1/2 cup Duke’s mayonnaise

1/2 cup pimento peppers, drained & chopped

1/4 cup chopped green onions

1 teaspoon freshly cracked black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne

dash of Tabasco


Using a food processor, (a food processor is essential as it makes the creamiest pimento cheese!) combine the cheddar, white cheddar and mayonnaise. Puree until smooth & creamy. In a bowl, combine peppers, onions, black pepper, salt, cayenne & Tabasco. Refrigerate overnight + serve with crackers.
