I am often sticker-shocked in the grocery store when seeing the prices of granola! Why purchase granola when it is super quick, simple and affordable to make at home? Perfect for an overnight flight (see pic below), check out my favorite granola recipe below. EnJOY!


Granola

you will need…
1/2 cup extra virgin olive oil
1/2 cup maple syrup
3 cups oats
1 teaspoon cinnamon
a pinch of sea salt
1 1/2 cups pecans
1 cup almonds
1 cup dried fruit (I prefer cranberries!)
In a large bowl, thoroughly combine olive oil, syrup, oats, cinnamon, & salt. Toss in pecans and almonds. Evenly spread the oat mixture on a parchment-lined cookie sheet, and bake at 325 degrees for about 45 minutes (gently toss the granola half way through baking), until the oats are golden brown in color. Allow granola to completely cool before adding dried fruit. Store in air-tight container for up to two weeks.
