Looking for a festive side to serve with your BBQ ribs this weekend? Red Velvet Cornbread is the perfect accompaniment that would bring Benjamin Franklin to his knees!

This sweet cornbread tastes like cake and literally melts in your mouth! Oh, and if you want to get extra savvy this 4th of July, go ahead and make “blue” velvet cornbread, too! (This would also score a touchdown in the Grove this fall! Hotty Toddy, y’all!)


you will need…

1 cup cornmeal

3 cups flour

1 cup white sugar

2 tablespoons baking powder

1 teaspoon salt

2/3 cup vegetable oil

1/3 cup melted butter

1 cup fresh corn kernels

4 eggs

2 1/2 cups whole milk

red or blue food coloring

 

Preheat oven to 350 degrees.

Combine dry ingredients: cornmeal, flour, sugar, baking powder & salt.

Add vegetable oil, melted butter, eggs, milk, and food coloring. Mix until well incorporated. Fold in corn.

Pour the batter into buttered miniature muffin pan, and bake for about 30-35 minutes.
