Holy Guacamole!
Not only is guacamole loaded with nutrients, it is so delicious and perfectly pairs with so many dishes! Serve as an appetizer with chips, dollop on baked fish, chicken salad, fajitas, burgers, pizza, soup—however you decide to serve your guacamole, be sure to check out this flavor-filled, easy breezy recipe! You will need…
(makes about 3 cups)
4 ripe avocados
juice from ½ lime
juice from ½ lemon
½ cup red onion, finely diced
1 jalapeno pepper, seeded & finely diced
1 small handful of cilantro, chopped
1 clove of garlic, minced
1 teaspoon kosher salt
1 teaspoon freshly cracked pepper
1 tomato, seeded & diced
Cut the avocados in half, and remove the pit. Using a knife, cut the avocado flesh into a cubed pattern. Scoop diced flesh with a spoon and place in a large bowl.
Immediately add lime & lemon juice, onion, jalapeño, cilantro, garlic, salt & pepper. Mix well with a fork while mashing diced avocado until desired consistency. Fold in tomatoes, and spritz the top of guacamole with a splash of lemon juice (to prevent browning).
