I hope everyone had a great weekend! It’s Monday, and Mondays can be tough! Often times, the last question you want to answer is, “What’s for dinner?” If you’re wanting a healthy dinner that cooks in 12 minutes, you’ve come to the right place! Baked shrimp is definitely a go-to at our house—it’s so crispy and tasty and super fast! As the show stopper to a spinach salad, tacos or simply standing alone, baked shrimp is sure to kick off a great week! EnJOY!


 

Crunchy Baked Shrimp

you will need…

(yield: about 32 shrimp)

½ cup panko bread crumbs

½ cup grated parmesan cheese

2 tablespoons flour

2 teaspoons seafood seasoning

pinch of salt

freshly ground pepper

3 egg whites

1.5 pounds of large shrimp, uncooked, peeled & deveined 

 

In a shallow bowl, combine panko, parmesan cheese, flour, seafood seasoning, salt & pepper. In a separate bowl, whisk egg whites with 1 tablespoon water. Dip shrimp in egg wash then coat in breading. Place shrimp on a cookie sheet lined with parchment paper. Bake for 6 minutes, then flip shrimp and bake for 6 more minutes, until shrimp is pink and breading is golden brown.

*For a variation, try crispy coconut shrimp by substituting 1/2 cup coconut flakes in place of parmesan cheese.
